Spiced Oatmeal-Craisin Cookies
This is a favorite of the guys who do the plowing and shoveling!
½ c white sugar
2 eggs, at room temp
1 tsp vanilla extract
1 ½ c all-purpose flour (or 1 c all-purpose and ½ c whole wheat)
1 tsp baking soda
½ tsp salt
1 ½ tsp cinnamon
½ tsp freshly-ground nutmeg
1 tsp cloves
3 c old-fashioned (rolled) oats
1 c craisins, chopped
1 c walnuts, toasted, cooled and chopped
Heat the oven to 350°.
Cream together the butter and both sugars. Add eggs, 1 at a time, and vanilla, and beat until smooth. In a separate bowl, whisk to combine the flour, baking soda, salt and spices. Stir flour mixture into butter mixture.
Add oats, craisins and walnuts and stir until evenly distributed. Drop by rounded tablespoonsful onto ungreased cookie sheets. Bake 10 – 12 minutes depending on the size of the cookies until light and golden – do not overbake. Cool on cookie sheets for 2 mins, then remove to racks to cool completely. Store airtight.
This is a good dough for making into slice-and-bake cookies – shape dough into a log about 2 inches in diameter on parchment paper, enclose in the parchment paper and store in the refrigerator until ready to bake at 350°. Slice cold dough into ¼ inch thick rounds and bake as above; if straight from the refrigerator, they may take longer than dough at room temp.
Note: you can alter the spices to use whatever ones you like – ginger and cardamom are very good together – and change up some or all of the craisins for other dried fruits – anything you think would be good with oatmeal, walnuts and spices.
